Homemade Cookie Recipes

Traditionally made with golden syrup, this scrumptious alternative uses maple syrup and tastes absolutely divine!

Shortbread Cookie Recipes
2 cups all purpose flour
1/4 teaspoon salt
1 cup unsalted butter at room temperature
1/2 cup powdered sugar
1 teaspoon pure vanilla extract

  1. Mix the flour and salt together.

  2. Cream the butter and sugar together until light and fluffy, you can use a hand or electric mixer to do this if you wish. Beat in the vanilla extract and then gently fold in the flour mixture until just combined.

  3. Flatten the dough into a small ball, cover with plastic wrap and put in the fridge for at least an hour.

  4. Preheat oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.

  5. Lightly flour a flat surface and roll out the dough to about a 1/4 inch thick. Using a lightly floured cutter, cut out your desired shapes.

  6. Place the shortbread on the prepared baking sheets and put it back in the fridge for about 15 minutes. (This will stop the cookies from spreading out too much.)

  7. Bake for 8 - 10 minutes, or until cookies are very lightly browned.

  8. Cool on a wire rack.

Chocolate Dipped Shortbread
6 ounces semi sweet or bittersweet chocolate, finely chopped

  1. Measure half of the chocolate and place in a heatproof bowl over a saucepan of simmering water. Melt the chocolate then take it off the heat.

  2. Add the remaining chocolate and stir it with a wooden spoon until completely melted (it will look smooth and glossy when it's ready).

  3. Dip the cookie (whichever end you want coated!) into the melted chocolate and then place it on a baking sheet lined with parchment paper.

  4. When you've done all the cookies put them into the fridge for about 10 minutes and allow the chocolate to harden.

These homemade cookie recipes for shortbread make about 20 cookies.

Anzac Cookie Recipe
1 cup all-purpose flour
2/3 cup sugar
1 cup rolled oats
1 cup dessicated coconut
4oz unsalted (sweet) butter
1/4 cup maple syrup
1/2 teaspoon baking soda
1 tablespoon boiling water

  1. Preheat the oven to 350 degrees F (180 degrees C) and line a 13 x 11 inch cookie sheet with baking paper.

  2. Sift the flour and sugar into a bowl add the oats and coconut, make a well in the center.

  3. Melt the butter and the maple syrup together over a low heat until the mixture is smooth. Remove from the heat. Dissolve the baking soda in the boiling water and add to the pan with the butter mixture.

  4. Add the butter mixture to the dry ingredients and mix well using a wooden spoon.

  5. Using your hands roll two tablespoons of mixture at a time into a ball and place on to the cookie sheet. Flatten slightly using a fork. If you like a crispier texture flatten the biscuits out a little more before baking.

  6. Bake for 13-15 minutes, cool slightly then remove from tray and cool on wire racks.

These homemade cookie recipes for Anzac biscuits will make about 24 cookies.

Biscotti makes another good choice to add to your cookie gift baskets as it's a nice hard biscuit which keeps well and doesn't break easily.
