Shortbread Cookie Recipes 2 cups all purpose flour 1/4 teaspoon salt 1 cup unsalted butter at room temperature 1/2 cup powdered sugar 1 teaspoon pure vanilla extract
- Mix the flour and salt together.
- Cream the butter and sugar together until light and fluffy, you can use a hand or electric mixer to do this if you wish. Beat in the vanilla extract and then gently fold in the flour mixture until just combined.
- Flatten the dough into a small ball, cover with plastic wrap and put in the fridge for at least an hour.
- Preheat oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.
- Lightly flour a flat surface and roll out the dough to about a 1/4 inch thick. Using a lightly floured cutter, cut out your desired shapes.
- Place the shortbread on the prepared baking sheets and put it back in the fridge for about 15 minutes. (This will stop the cookies from spreading out too much.)
- Bake for 8 - 10 minutes, or until cookies are very lightly browned.
- Cool on a wire rack.

- Add the remaining chocolate and stir it with a wooden spoon until completely melted (it will look smooth and glossy when it's ready).
- Dip the cookie (whichever end you want coated!) into the melted chocolate and then place it on a baking sheet lined with parchment paper.
- When you've done all the cookies put them into the fridge for about 10 minutes and allow the chocolate to harden.
