Tomato Relish Recipe with Smoked Tomatoes

Tomato Relish 2 onions 2-3 red capsicums 4 1/2 lbs smoked tomatoes or diced canned or fresh tomatoes 2 heaped tablespoons powdered ginger 1 cup white vinegar 1 cup brown sugar salt and pepper
- Peel and dice the onions, place in a large pan and cook for approximately 3-4 minutes. Add the ginger and cook for about 30 seconds.
- Add the rest of the ingredients and cook over a low heat for about one hour or until all the liquid has almost disappeared.
- Remove from the heat and season with salt and pepper. Add the hickory liquid if you are using.
Leave the jam to cool and store in an airtight container in the fridge. The sugar and vinegar in this recipe will act as a preservative so it will last for up to about six weeks. You can serve the relish as an accompaniment to lamb, pork or chicken and it's also superb with fish. Or use as a chutney to add a little EXTRA to a sandwich, quiche, or frittata.
